Just a few more sleep and Christmas is right on our doorstep already. I can see the streets brightly decorated with colorful lights, hear timeless Christmas songs on the airwaves and see busy shoppers going to and fro beating the huge crowd and traffic to buy their loved ones Christmas presents. If majority of the people look forward to exchanging gifts, I on the other hand look forward to our yearly Noche Buena.
It’s our sumptuous dinner on the eve of Christmas. My mom never fails to prepare one of my most favorite dishes, paella! I like the vegetable and meat version though since I’m not too fond of seafood. I love how my mom mixes all the ingredients along with the rice, saffron and olive oil. Just thinking about it now makes my mouth water it’s as if I can taste it already.

Just a little trivia for you guys, did you know that paella means frying pan in Valencia? I didn’t know this until I’ve asked my mom what it means because all along I thought it means rice dish. Anyway, can’t contain my excitement any longer, I might convince her to cook it for me even before Christmas. I just hope that she agrees.
